Orange Cake

1 (18.25 ounce) box yellow cake mix
1 (4 serving size) package instant vanilla pudding
3/4 cup orange juice
1/2 cup vegetable oil
4 eggs
1 teaspoon orange extract
1 tablespoon orange zest
Red and Yellow Food Coloring

Buttercream Frosting (approx) and garnish:
More than 1 lb. confectioner�s sugar
1/2 pound (two sticks) butter
4-5 tablespoons milk
1 tablespoon orange zest
1 12 ox. package mini chocolate chips

Cake Directions:
Grease one 13x9 pan or two 9-inch round pans. Preheat oven to 325 degrees F (165 degrees C).

Mix together cake mix, pudding mix, 3/4 cup orange juice, oil, eggs, orange extract. Add four drops red food coloring and two drops yellow food coloring - or until the desired orange color is achieved. Pour batter into prepared pan(s). Bake for 35 minutes or until done - check with tooth pick. Cool.

Frosting:
Mix sugar, butter, and milk until of desired consistency. Add orange zest. Spread on cooled cake. Lightly press (individually) each mini chocolate chip onto side of cake, and also sprinkle them on top, lightly pressing them into the frosting to secure them.

Alternate: Use actual orange peel shaved in various configurations for a decorative top garnish and rim the edges (works well for round cakes) with chocolate chips.
